*Dragon in French can mean either "Dragon" or "Dragoon" depending on context. Given the family name of one of the Hotel's early owners in the 15th century -- Drachenfels ("Dragon's Rock") -- I suspect it is indeed "Dragon," in this case, not "Dragoon."
There's a Court of the Dragon in Paris between Rue du Dragon and Rue de Rennes.
